You are using the wrong stylist!!! Find a stylist that knows what they are doing!! I have many clients with beautiful curly hair. Razor cutting is key to curly hair and before sitting in the chair there should always be a consultation so you both understand what you are looking for.

Other hairdressers usually don't take into consideration that when your hair is wet it is longer, but when it dries the curls make it appear a lot shorter. So they usually cut more off than they should.
